Apricot-Ginger Sauce

To be used with the Sautéed Chicken Breast recipe or the Italian Baked Chicken Cutlets recipe.

Ingredients

  • 1 and 1/4 cups Chicken Broth
  • 1/2 cup Apricots (dried, chopped)
  • 1 tbsp Ginger (fresh, minced)
  • pinch Cayenne Pepper
  • 2 Scallions (chopped)
  • 2 tbsp Sour Cream

Step by Step Instructions

Step 1: 

In the hot drippings in the skillet used to sauté chicken, add the chicken broth. Heat to boiling over medium-high heat, stirring to loosen browned bits.

Step 2:

Add apricots, ginger, and cayenne; cook for 4 minutes.

Step 3:

Add the scallions and cook for 1 minute or until thickened. Remove from heat and whisk in sour cream. Pour over the chicken.
