Pumpkin Spice Cake

Ingredients

  • 2 cups Flour
  • 1 and 3/4 cups Sugar
  • 1 tsp Salt
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 tsp Cinnamon
  • 1 tsp Allspice
  • 1 tsp Ginger
  • 4 Eggs
  • 16 oz Pumpkin (canned filling)
  • 1 cup Canola Oil
  • 1/2 cup Walnuts (optional, or use dates)

Step by Step Instructions

Step 1: 

Preheat oven 350 degrees.

Step 2:

Mix dry ingredients. Add eggs, pumpkin, and oil. Mix thoroughly. Blend in nuts (optional).

Step 3:

Grease and flour two 9″ cake pans or one 9″ x 2″ x13″ pan.

Step 4:

Bake for 30 min at 350 degree (layers) (or 45 minutes for a rectangular pan). I usually use a Bundt pan and bake for 55-60 minutes or until toothpick comes out clean. A Bundt serves 20+ and I like it because it is shaped like a pumpkin.

Step 5:

When cool, frost with Cream Cheese Frosting,  or cover with whipped cream or Cool Whip.
