No-Cook Tomato Sauce

This recipe is a topping for the Italian Baked Chicken Cutlet recipe. It is a great option for the summer months!

Ingredients

  • 1/4 cup Olive Oil (Extra Virgin)
  • 2 to 3 Tomatoes (large, diced)
  • 3 tbsp Balsamic Vinegar
  • 3 cloves Garlic (minced)
  • 1/2 cup Basil (fresh, chopped)
  • 1/2 cup Parmesan Cheese (grated, or Romano)

Step by Step Instructions

Step 1: 

In a large bowl combine tomatoes, garlic, olive oil, and vinegar. Mix in basil and cheese. Adjust the amounts of the individual ingredients to suit your tastes.

Step 2:

Spoon over Italian Baked Chicken Cutlets.
