Cranberry Date Bars

Ingredients

Bars

  • 12 oz Cranberries
  • 8 oz Dates (pitted and chopped)
  • 1 tsp Vanilla Extract
  • 2 cups Flour
  • 2 cups Oats (rolled oats)
  • 1 and 1/2 cups Brown Sugar (packed)
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 cup Butter (melted, or margarine)

Orange Glaze

  • 2 cups Powdered Sugar (sifted)
  • 1/2 tsp Vanilla Extract
  • 2 to 3 tbsp Orange Juice (enough to make the glaze a drizzling consistency)

Step by Step Instructions

Step 1: 

Preheat oven to 350 degrees.

Step 2:

For filling; in medium sauce pan combine cranberries and dates. Cook, covered, over low heat for 10 to 15 minutes or till cranberries pop, stirring frequently. Stir in vanilla. Set aside.

Step 3:

In a large mixing bowl stir together flour, oats, brown sugar, baking soda, and salt.

Step 4:

Stir in margarine or butter till well blended.

Step 5:

Pat half of the oat mixture on the bottom of a 13x9x2 inch baking pan. Bake in a 350° oven for 8 minutes.

Step 6:

Carefully spread filling over baked oat mixture.

Step 7:

Sprinkle remaining oat mixture on top. Pat gently. Bake for 20 to 22 minutes more or till golden. Cool on a wire rack.

Step 8:

While cooling prepare the orange glaze. In a medium mixing bowl stir together sifted powdered sugar, . vanilla, and enough orange juice (2 to 3 Tbsp.) to make a drizzling consistency. Makes 3/4 cup.

Step 9:

Drizzle Orange Glaze over baked tray. Cut into bars. Makes 32 bars.
