Stuffed Flank Steak

Ingredients

Rice Stuffing

  • 1/4 cup Butter (or margarine)
  • 1/2 cup Onions (chopped)
  • 1 clove Crushed Garlic
  • 1 and 1/2 cup Rice (cooked)
  • 1/2 cup Parsley (chopped)
  • 1/2 cup Parmesan Cheese (grated)
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Steak

  • 2 Flank Steaks (1 and 1/4 lbs or more each)
  • 1 clove Crushed Garlic
  • 2 tbsp Soy Sauce
  • 1/2 tsp Black Pepper
  • 2 tbsp Butter (or margarine)
  • 1 tbsp Ginger
  • 1 cup Beef Stock

Step by Step Instructions

Step 1: 

Preheat oven to 350 degrees.

Step 2:

To prepare the stuffing, melt butter in a skillet and sauté onions and garlic. Cook till golden, remove from heat. Stir in rice, parsley, cheese, salt, and pepper.

Step 3:

Using a meat tenderizer, pound flank steaks until 1/2 inch thin. Wipe steak with damp paper towels. Score each side of steaks, rub on both sides with garlic.

Step 4:

Brush with soy sauce and pepper, lay steak flat. Spread butter on steak.

Step 5:

Place stuffing over steak keeping 1 1/2 inches around edge. Place other steak on top, rub butter on top and ginger. *** Alternately prepare both flank steaks with stuffing and roll them into a jelly rolls securing them with cooking string.

Step 6:

Roast 45-60 minutes at 350 degrees. Baste occasionally with beef broth.
