Spinach Mushroom Quiche – No Crust

Ingredients

  • 2.5 cups Mushrooms (sliced)
  • 2 Eggs
  • 1/3 cup Bisquick
  • 6 oz Swiss Cheese (shredded)
  • 3/4 cup Spinach (cooked, well drained, use chopped)
  • 1 cup Milk
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

Step by Step Instructions

Step 1: 

Preheat oven to 350 degrees.

Step 2:

Spray a pie dish with PAM or other non-stick oil spray.

Step 3:

Arrange 2 cups sliced mushrooms over bottom of pie plate.

Step 4:

In a bowl mix all other ingredients. Pour mixture over mushrooms.

Step 5:

Bake for 30 minutes at 350 degrees. Remove from oven; add 1/2 cup mushrooms over top. Bake 30 minutes more.
