Pizza Bocconcini

This was one of the recipes given to us by our family in Australia when they were visiting us in the United States.

Ingredients

  • 1 Pizza Dough/Base
  • 9 oz Bocconcini Cheese
  • 9 oz Mozzarella Cheese
  • Tomato Paste
  • Cherry Tomatoes
  • Baby Spinach Leaves
  • Rocket Leaves
  • Olive Oil

Step by Step Instructions

Step 1: 

Spread Tomato Paste over Pizza Base, before sprinkling with Mozzarella Cheese.

Step 2:

Cut Cherry Tomatoes in half, and spread over pizza. Cut Bocconcini into halves or slices, and place on top.

Step 3:

Finally add Baby Spinach and Rocket leaves, drizzle lightly with Olive Oil and cook under the grill (broiler?), or in a pizza oven, for 7-10 minutes, or until golden.
