Ingredients
Crumb Crust
- 1 and 1/2 cups Graham Cracker Crumbs
- 5 tbsp Butter (unsalted)
- 1/3 cup Sugar
- 1/8 tsp Salt
Cheesecake
- 40 oz Cream Cheese
- 1 and 3/4 cups Sugar
- 3 tbsp Flour
- 1 lemon (zest)
- 5 Eggs
- 2 Egg Yolks
- 1/2 tsp Vanilla Extract
Step by Step Instructions
Step 1:
Stir ingredients for the crust and press onto bottom of a buttered 9x9x1/2 spring form pan.
Step 2:
Preheat oven 500 degrees.
Step 3:
Beat together cream cheese, flour and zest until smooth with flat beater attachment.
Step 4:
Add eggs and yokes one at a time, then vanilla beating on slow speed.
Step 5:
Put spring form pan in a shallow baking pan. Pour filing into crust and place in middle of oven for 12 minutes or until puffy.
Step 6:
Reduce temp. 200 degrees until cake is firm (center will be wobbly) about 1 hr.
Step 7:
Run knife around top of cake to loosen and cool completely on rack. Chill covered loosely at least 6 hours.
Step 8:
Release pan and transfer to platter and bring to room temperature before serving. Top with raspberries or strawberries, if desired.
