Meatballs

By: Marie DePadova • In: Entrees • Cuisine: Italian

This is our recipe for meatballs.  We always made them when making Pasta Sauce.

Ingredients

  • 1 lb Ground Beef (lean)
  • 3 Eggs
  • 1/4 cup Bread Crumbs (Italian style, fine)
  • 1/8 cup Romano Cheese (grated)
  • pinch Parsley (or 1 sprig finely chopped if fresh)
  • 1 clove Garlic (minced)
  • 1 tsp Salt
  • to taste Black Pepper
  • for frying Olive Oil

Step by Step Instructions

Step 1:

Place the ground beef, bread crumbs, cheese, parsley, garlic, eggs, salt and pepper in a large mixing bowl. Mix thoroughly with your hands. Cover and let stand in refrigerator for 20 to 60 minutes. (pictures shown are of a double batch)

Step 2:

Shape into 1 1/2 inch balls and then flatten slightly. Moisten hands periodically with water to prevent meat mixture from sticking to hands. Fry in olive oil, turning to brown on all sides.

Yield: 10 to 15 meat balls. Meat balls may be frozen individually and placed in a plastic container or bag in freezer for 6 months or more. May be heated in oven or microwave and eaten as is or may be added to meat sauce for pasta with meat balls.
