Chicken Breasts Alfredo

Ingredients

For Chicken Breasts

  • 1 and 1/2 lbs Chicken Breasts (boneless, skinless)
  • 1/2 cup Flour
  • 4 Eggs (beaten)
  • 1/2 cup Romano Cheese (grated)
  • 1/4 cup Parsley
  • 1/2 tsp Salt
  • 1 cup Bread Crumbs (fine)
  • 3 tbsp Butter (or margarine)
  • 2 tbsp Canola Oil
  • 1 slice per chicken breast Mozzarella Cheese

For Cheese Sauce

  • 1 cup Whipping Cream
  • 1/4 cup Water
  • 1/4 cup Butter (or margarine)
  • 1/2 cup Romano Cheese (grated)
  • 1/4 cup Parsley

Step by Step Instructions

Step 1: 

Preheat oven to 425 degrees.

Step 2:

Coat chicken in flour. Mix the eggs, water, Romano cheese, parsley, and salt. Dip the chicken into the egg mixture; then, into the bread crumbs to coat fully.

Step 3:

Heat butter and oil in a large skillet. Cook chicken breasts over medium heat until brown, about 15 minutes. Remove chicken to 11 x 7 inch baking dish.

Step 4:

Heat cream, water, and butter in a 1-quart saucepan until the butter melts. Add cheese, and stir over medium heat for 5 minutes. Stir in parsley.

Step 5:

Pour the cheese sauce over the chicken. Top each chicken breast with a slice of Mozzarella cheese. Bake at 425 degrees until the cheese melts and the chicken is tender (about 8 minutes).
