Ingredients
- 2 cups Flour
- 1 and 1/2 tsp Cinnamon
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 3/4 tsp Salt
- 1/4 tsp Cloves (ground)
- 1/4 tsp Nutmeg (grated)
- 2 and 1/2 sticks Butter – Unsalted (at room temperature)
- 1 cup Brown Sugar (firmly packed, light brown sugar)
- 3/4 cup Sugar
- 4 Eggs
- 1 lb Carrots (peeled and shredded, about 4 and 1/2 cups)
- 1 cup Walnuts (chopped)
- 1/3 cup Raisins (golden)
Step by Step Instructions
Step 1:
Preheat oven to 350 degrees.
Step 2:
Grease and flour 13x9x2 baking pan.
Step 3:
Stir together first 7 ingredients in medium size bowl.
Step 4:
Beat together butter, brown sugar and granulated sugar in large bowl until fluffy.
Step 5:
Add eggs, one at a time, beating well after each addition.
Step 6:
Beat in flour mixture until blended.
Step 7:
Stir in carrots, walnuts and raisins.
Step 8:
Spoon batter into prepared pan. Bake in oven at 350 degrees for 45-50 minutes or until wooden pick inserted in center of cake comes out clean.
Step 9:
Cool in pan on wire rack 10 minutes. Remove from pan and cool completely on wire rack.
Step 10:
Top with cream cheese frosting. Wrap and keep refrigerated.
