Shrimp and Chicken Stir-Fry

Ingredients

  • 1 and 1/2 cups Chicken Broth
  • 3 tbsp Teriyaki Sauce
  • 2 tbsp Cornstarch
  • 1/8 tsp Crushed Red Pepper Flakes
  • 1/2 lb Chicken Breast (skinless, boneless – cut into 1/2 inch strips)
  • 1 clove Garlic (minced)
  • 2 tbsp Canola Oil (divided)
  • 1/2 lb Shrimp (peeled, deveined raw shrimp)
  • 2 cups Broccoli (florets)
  • 1 cup Mushrooms (fresh, sliced)
  • 1 Red Bell Peppers (cut into strips)
  • Chow Mein Noodles (or rice)

Step by Step Instructions

Step 1: 

In a small bowl, blend broth, teriyaki, cornstarch and red pepper; set aside.

Step 2:

In large skillet, stir-fry chicken and garlic in 1 Tbsp. oil for 2 minutes. Add shrimp and stir-fry 2 to 3 minutes, or until chicken and shrimp are cooked; remove.

Step 3:

Stir-fry broccoli, mushrooms and red bell pepper in remaining oil about 2 to 3 minutes until vegetables are tender-crisp.

Step 4:

Stir reserved broth mixture into vegetables. Heat, stirring until thickened.

Step 5:

Return chicken and shrimp to skillet; heat. Serve over noodles or rice.
