Sesame Seed Candy (Giuggiulena)

Ingredients

  • 1 lb Sesame Seeds (toasted)
  • 2 lbs Almonds (shelled and toasted)
  • 2 cups Sugar
  • 1 lb Honey
  • from 1 Orange Orange Peel (dried and finely minced, about 1 tbsp)
  • from 1 Tangerine Tangerine Peel (dried and finely minced, about 1 and 1/2 tsp)
  • 1 stick Cinnamon (crumbled)
  • Jimmies

Step by Step Instructions

Step 1: 

Preheat oven to 350 degrees.

Step 2:

Place sesame seeds on a baking sheet and toast seeds just until slightly golden. Put aside.

Step 3:

Shell almonds and spread on a baking sheet. Toast nuts for 10 minutes and while still warm rub them together in a dish towel to remove as much of the brown skin as possible. Put aside.

Step 4:

Measure all other ingredients and put aside.

Step 5:

*** Be sure no children are under foot as burns from this mixture can be quit severe!!! ***

Step 6:

A minimum of 2 people are needed to successfully make this candy.

Step 7:

Put honey and sugar into pot and, while stirring, heat until the sugar is melted. Add seeds and almonds and cook, constantly stirring with a wooden spoon, until the mixture turns a deep gold. Add the tangerine peel, orange peel and the cinnamon while stirring.

Step 8:

Immediately turn onto a marble slab coated with butter. Shape into a rectangle about 1/4 inch thick with a wooden spoon. Sprinkle with jimmies.

Step 9:

Immediately cut into 1/2 inch strips and then cut diagonally for diamond shapes about 2 inches long, using a large knife. Start at edges and work your way to the center. Speed is essential because the candy hardens rapidly. Extreme care should be taken because the mixture is very hot and can cause severe burns.
