Roasted Potatoes

Deliciously crispy on the outside and soft on the inside!

Ingredients

  • 2 lbs Yukon Gold Potatoes (Cleaned with skins on or peeled, quartered)
  • 2 tbsp Olive Oil (extra-virgin)
  • 2 tbsp Parsley (chopped)
  • to taste Salt
  • to taste Black Pepper

Step by Step Instructions

Step 1: 

Preheat oven to 400 degrees.

Step 2:

Quarter the potatoes and put them into a bowl. Add the olive oil and mix.

Step 3:

Spread out the potatoes onto a baking sheet/pan. Season with salt and pepper. Sprinkle parsley on top.

Step 4:

Roast in the oven at 400 degrees until golden and crispy on the outside, tender and cooked through on the inside, about 45 minutes.
