Pumpkin Nut Bread

Ingredients

  • 3 and 1/2 cups Flour
  • 2 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1 tsp Salt
  • 1/2 tsp Baking Powder (double-acting)
  • 1/2 tsp Allspice (ground)
  • 2 and 2/3 cups Sugar
  • 1 cup Salad Oil (or olive oil)
  • 4 Eggs
  • 1/3 cup Water
  • 16 oz Pumpkin
  • 1/2 cup Walnuts (chopped, or pecans)

Step by Step Instructions

Step 1: 

Preheat oven 350 degrees. Grease two 9×5 inch loaf pans; set aside.

Step 2:

Combine flour and next 5 ingredients; set aside.

Step 3:

In large mixing bowl beat sugar and oil. Add eggs, water and pumpkin; beat well.

Step 4:

Gradually add dry ingredients and stir just until blended. Stir in nuts. Pour batter into greased loaf pans.

Step 5:

Bake for 55 to 60 minutes, until toothpick inserted in center comes out clean. Remove from oven to wire rack.

Step 6:

Cool 10 minutes before removing from pans. Then let cool completely on wire rack. Makes 2 loaves.
