Italian Cheesecake

Ingredients

  • 24 oz Ricotta Cheese (part-skim)
  • 8 oz Cream Cheese (or Mascarpone Cheese)
  • 1/2 cup Sugar
  • 3 Egg Yolks (lightly beaten)
  • 2 tbsp Vanilla Extract
  • 2 tbsp Cognac (or brandy)
  • 2 Pie Crusts (9-inch)

Step by Step Instructions

Step 1: 

Preheat oven to 375 degrees.

Step 2:

Cream cheeses together. Add egg yolks, sugar, vanilla, Cognac or Brandy.

Step 3:

Pour into prepared pie crusts. Bake at 375 degrees for 30 minutes or until tester inserted in the center comes out clean. Makes 2 pies.

Step 4:

Note: Amaretto, Frangelico or other liqueurs may be substituted for the cognac. For a plain cheesecake, use only the vanilla. Chopped pecans or other nuts may be added.
