Irish Soda Bread

Ingredients

  • 4 cups Flour
  • 3/4 cup Sugar
  • 1 tsp Baking Soda
  • 3 tsp Baking Powder
  • 1 tsp Salt
  • 3/4 cup Raisins (placed in boiling water for a few minutes and then drained before using)
  • 1/4 lb Margarine
  • 1/8 tsp Cinnamon (optional)
  • 1.5 cups Buttermilk
  • 2 Eggs

Step by Step Instructions

Step 1: 

In a bowl, sift dry ingredients together. Blend in margarine until mixture is fine like bread crumbs. Stir in raisins.

Step 2:

In a separate bowl beat two eggs and add buttermilk to them. Pour into the dry ingredients. Mix with wooden spoon to make soft dough.

Step 3:

Knead lightly on a floured board until it becomes smooth. Form into round, flat cake.

Step 4:

Place in well-greased 8 inch or 9 inch cake pan. (It is an Irish tradition to cut a cross on the top of the bread with a sharp, floured knife) Bake at 350 degree for one hour, then lower the temperature to 325 degrees and continue to bake an additional half hour.

Step 5:

Remove to rack and cool thoroughly before slicing. Serve with butter.
