Chicken Marsala

Ingredients

  • 1 lb Chicken Breast (boneless, skinless, pounded thin)
  • 1 tsp Salt
  • 1/4 lb Mushrooms (sliced thin)
  • to taste Black Pepper
  • 2 tbsp Parsley (chopped)
  • 1/4 cup Marsala Wine
  • Olive Oil

Step by Step Instructions

Step 1: 

Cut chicken into pieces.

Step 2:

Heat oil in a large skillet and sauté a little at a time until browned on both sides. Set chicken aside – keep warm.

Step 3:

Reduce heat, add mushrooms; sauté until browned.

Step 4:

Return chicken to the skillet – pour in the marsala wine, and add seasonings. Cover and simmer for 2 minutes. Serve over rice.
