Chicken Cacciatore

Ingredients

  • 1 and 1/2 lbs Chicken Breast (boneless, skinless, cut into pieces)
  • 4 cloves Garlic (minced)
  • 1/2 cup Onions (chopped)
  • 4 tsp Olive Oil
  • 1/2 lb Mushrooms (sliced)
  • 1 Red Pepper (cut in strips)
  • 1 Green Bell Peppers (cut in strips)
  • 1/2 tsp Red Pepper Flakes
  • 28 oz Crushed Tomatoes (plus half a can of water)
  • to taste Salt
  • to taste Black Pepper
  • to taste Basil
  • Flour

Step by Step Instructions

Step 1: 

Coat the chicken pieces in flour.

Step 2:

In a large skillet add half the olive oil and sauté the chicken until white on both sides. Remove the chicken from the pan.

Step 3:

Return the pan to the stove – add the remaining olive oil and sauté mushrooms garlic, onions, red pepper flakes, and peppers. Season with salt, pepper, and basil. Cook for 5-8 minutes.

Step 4:

Add the crushed tomatoes to the saucepan with 1/2 can of water. Cook for 1/2 hour. Add the chicken and cook for 15 minutes. Serve over Fusilli pasta.
