Mom made this regularly and it was always one of my favorites.
Ingredients
- 1/4 cup Olive Oil
- 2 cloves Garlic (minced)
- 1/2 lb Chicken Breast (boneless, skinless. Cut crosswise into 1/2 inch wide strips)
- 1 and 1/2 cups Broccoli (floweretts)
- 3/4 cup Sun-dried Tomatoes (oil packed, thoroughly drained and thinly sliced)
- 1 tsp Basil
- pinch Red Pepper Flakes
- to taste Salt
- to taste Black Pepper
- 1/4 cup White Wine (dry)
- 3/4 cup Chicken Broth
- 1 tbsp Butter (or margarine)
- 1/2 lb Bow-tie Pasta (cooked according to package directions and drained)
- Parmesan Cheese (grated, or Romano)
Step by Step Instructions
Step 1:
In a large skillet, heat the oil over medium heat. Sauté the garlic for 1 minute, until golden, stirring constantly.
Step 2:
Add the chicken strips and sauté till white and almost completely cooked, about 7-10 minutes.
Step 3:
Add the broccoli and sauté till crisp-tender, and then add the sun-dried tomatoes, basil, red pepper flakes, salt and pepper.
Step 4:
Add the wine, and then add the chicken broth and butter or margarine. Cook 3-5 minutes, or till heated through, stirring occasionally.
Step 5:
Toss the freshly cooked pasta and the chicken mixture. Serve with Parmesan or Romano cheese, if desired.
