Chicken Stimparata

Ingredients

  • 1 Fryer Chicken (approximately 3 lbs)
  • 2 tbsp Canola Oil (for frying)
  • 2 cloves Garlic (large, chopped)
  • 10 Mint Leaves (washed, patted dry)
  • 1 tbsp Capers (rinsed in cold water)
  • 1 cup Green Olives (split)
  • 1/2 cup Red Wine Vinegar

Step by Step Instructions

Step 1: 

Cut chicken into serving size pieces, wash and pat dry with a paper towel.

Step 2:

Heat a heavy skillet, add the oil and fry the chicken until golden brown on all sides. Transfer the chicken to a pan.

Step 3:

Add the garlic, to the skillet, and sauté until golden.

Step 4:

Turn off heat and add the mint leaves, capers and olives. Stir so that all the ingredients are coated and then transfer to the pan containing the chicken.

Step 5:

Add the vinegar, cover the pan and bring to a boil. Lower the heat and simmer for 10 minutes, turning the chicken several times.
