Chinese Roast Pork

Ingredients

  • 2 to 3 lbs Boneless Pork Chops (or other pork cut, cut into strips of about 3 by 6 inches and no more then 3/4 inches thick)
  • 3 cloves Garlic (minced)
  • 3 tbsp Sugar
  • 1/2 cup Hoisin Sauce
  • 1/2 cup Soy Sauce
  • 1 tbsp Red Food Coloring
  • 1/2 cup Sherry (dry)

Step by Step Instructions

Step 1: 

Place pork in a shallow glass baking dish – one level. Mix all marinade ingredients in a bowl and pour over the pork. Make sure all surfaces of each piece of pork are covered with the marinade. Let stand 2-3 hours at room temperature, turning pork over once or twice during this period.

Step 2:

Place one oven rack as close as possible to the top of the oven. Line a roasting pan with aluminum foil. Add water to a depth of about 1/2 inch. Place pan with water on bottom rack.

Step 3:

Preheat oven to 375º.

Step 4:

Pull top rack partially out of the oven. Drain pork and push an “S” hook into top of each strip. Hang the other end of the hook onto top rack, keeping the pork strips spaced. Push top rack back into oven. The strips should be hanging over the water filled pan. Close oven and roast at 375º for 45 minutes.

Step 5:

The roast pork may be diced, cubed or sliced for other recipes requiring roast pork, placed in containers, and frozen.
