Harvest Pound Cake

Ingredients

  • 2 cups Sugar
  • 1 and 1/2 cups Canola Oil
  • 2 tsp Vanilla Extract
  • 3 Eggs
  • 3 cups Flour
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 2 Apples (medium apples, peeled and finely chopped – about 2 cups)
  • 1 cup Walnuts (chopped)

Step by Step Instructions

Step 1: 

Preheat oven to 350 degrees.

Step 2:

Grease and flour 12-cup Bundt cake pan.

Step 3:

Beat sugar, oil, vanilla and eggs in large bowl with electric mixer on medium speed until light and fluffy. Stir in flour, salt and baking soda until smooth. Stir in apples and nuts.

Step 4:

Pour into prepared Bundt cake pan. Bake 1 hour to 1 hour 20 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes. Remove from pan to wire rack.

Step 5:

Spoon Caramel Glaze (see Caramel Glaze recipe) over warm cake. A store-bought caramel topping can be used instead of the homemade glaze.
