Blueberry Crisp

Ingredients

Crumb Mixture

  • 1/4 cup Butter (softened)
  • 1/2 cup Flour
  • 1/4 cup Sugar
  • 1/4 cup Brown Sugar (light brown)
  • 1/2 cup Oats (uncooked)
  • 1/4 tsp Cinnamon

Berry Mixture

  • 1 tbsp Cornstarch
  • 1/2 cup Sugar
  • 1/2 cup Water
  • 6 cups (about 3 pints) Blueberries (fresh, washed)
  • 1 tsp Lemon Zest
  • 1 tbsp Lemon Juice

Step by Step Instructions

Step 1: 

Preheat oven to 350 degrees.

Step 2:

In medium bowl, mix butter with flour. Stir in 1/4 cup sugar, brown sugar, oats and cinnamon until mix is crumbly.

Step 3:

In medium saucepan, mix cornstarch with 1/2 cup sugar. Stir in water and 3 cups berries. Boil 1 minute, remove from heat.

Step 4:

Add remaining berries, lemon zest and juice, stir gently.

Step 5:

Pour into 2 qt. shallow baking dish. Sprinkle top with crumb mixture.

Step 6:

Bake 25 minutes or until golden brown on top. Serve at room temperature with vanilla ice cream.
