Artichoke Bake

Quiche-like appetizer or side dish

Ingredients

  • 18 oz Artichoke Hearts
  • 1 Egg
  • 8 oz Mozzarella Cheese
  • Romano Cheese
  • Garlic Powder
  • Onion Powder
  • 1 tbsp Olive Oil
  • Breading Mixture
  • 2/3 cup Bisquick
  • 1 cup Milk
  • 2 Eggs
  • 1/4 tsp Black Pepper
  • 1 tsp Salt

    Step by Step Instructions

    Step 1: 

    Preheat oven to 350 degrees

    Step 2:

    Cut artichoke hearts. Heat olive oil in a medium sized pan and sauté the artichokes with garlic powder and onion powder. Grandma Lucy used a “pinch” of each so I would recommend that you start with a teaspoon of each and alter the amount to taste.

    Step 3:

    In a bowl mix the egg, shredded mozzarella cheese and grated Romano cheese.

    Step 4:

    Add the suauted artichokes into the bowl and mix. Spread the combined mixture into a square 9″ x 9″ baking dish sprayed with Pam or similar non-stick oil spray.

    Step 5:

    In another mixing bowl whisk the Bisquick, eggs, milk, salt and pepper.

    Step 6:

    Pour Bisquick mixture over the artichoke heart mixture and bake in the oven for 45 to 60 minutes.

      I made this recipe years ago as a side dish with dinner. As mentioned in the recipe the amount of garlic power, onion powder and Romano Cheese were not specified in the original recipe. I went with 1 tsp of garlic powder and onion powder. For Romano cheese I used 1/2 cup. I wasn’t able to find frozen artichoke hearts so I went with jarred artichoke hearts instead.

      I don’t really remember this recipe so I can’t compare the results to what I remember from my childhood. The Artichoke Bake has a quiche-like consistency to it. At times I thought it was tasty and at times I thought it just needed more seasoning. Perhaps some more Romano Cheese or something else to elevated it a bit.

      I also don’t remember what the finished product was supposed to look like. I thought it was done but maybe it should have been a little more golden brown? If anyone remembers please be sure to comment.

      I would make this again however I would consider altering the recipe to give it more flavor. I might even add some diced sun dried tomatoes.
