I was looking for an ideal low-carb breakfast alternative to eggs that tasted good. I kept changing the recipe until I arrived at the recipe below. If it doesn\u2019t suit your tastes then experiment with different options until it works for you!<\/p>\n<p>I don\u2019t have net carb info for the recipe, and if you sprinkle a teaspoon or so of mini morsels on the top of your bowl it certainly isn\u2019t super low carb. You can do this in a food processor a few cups at a time.\r\n\r\n\r\n\r\nCombine the nuts, coconut, seeds, salt and cinnamon in the large mixing bowl and mix thoroughly.\r\n\r\n\r\n\r\nMelt the butter in a large bowl or 2-cup glass measuring cup (if using a microwave).\r\n\r\n\r\n\r\nMix the vanilla and butter together.\r\n\r\n\r\n\r\nAdd the butter\/vanilla mixture to the mixing bowl with the nut mixture a small amount at a time mixing thoroughly.\r\n\r\n\r\n\r\nTurn out mixture onto a baking pan (USA Pan recommended). Spread to an even layer.  If your mixture doesn't fill the bottom of the baking pan use a smaller one (otherwise those areas will burn).\r\n\r\n\r\n\r\nBake for 15 minutes and immediately remove from the pan into a bowl to prevent overcooking\r\n\r\n\r\n\r\nLet cool completely in the bowl.  Mix occasionally to help the cooling process.\r\n\r\n\r\n\r\nStore the granola in a container in the refrigerator.  You can use an empty Costco Mixed Nuts jar if you don't have another container.\r\n\r\n\r\n\r\nServing size is about a 3\/4 of cup of the granola.
