Ingredients

1 and 1/4 cups Chicken Broth
1/2 cup Apricots dried, chopped
1 tbsp Ginger fresh ginger root, minced
pinch Cayenne Pepper
2 Scallions chopped
2 tbsp Sour Cream

In the hot drippings in the skillet used to sauté chicken, add the chicken broth. Heat to boiling over medium-high heat, stirring to loosen browned bits.

Add apricots, ginger, and cayenne; cook for 4 minutes.

Add the scallions and cook for 1 minute or until thickened. Remove from heat and whisk in sour cream. Pour over the chicken.
