Preheat oven to the Warm setting (lowest possible for your oven). This will be used to keep the cooked chicken warm while you are making the sauce. |

In a pie plate mix flour, salt, and pepper; use the mixture to coat the chicken. |

Melt the butter in a skillet over medium heat. Add the chicken; sauté 10 minutes or until done, turning once. Start checking your chicken for doneness 3 minutes before the recommended cooking time is up. Use a meat thermometer to cook the chicken to 165 degrees. |

Place the chicken on a plate and put it in the warm oven. Make one of the following sauces to pour over the chicken and serve. |
