In a double boiler, whisk egg yolks, sugar and cold water. When mixture is smooth and slightly thickened, gradually add Marsala. |

Whisk vigorously until thick and foamy. Remove from heat, place top of boiler in ice and whisk until custard is chilled. Pour in glasses. Refrigerate until served. |
