While the cake is fantastic the story behind the name is even better.
In 1977 we had family visiting from Italy. They were staying at Grandma Lucy’s house, which was close to us. My mother decided to bake a cake to bring over that evening to have with coffee after dinner. I remember her being busy that day but she scrambled that afternoon to make the cake. It looked and smelled delicious sitting on the table in the kitchen.
We all went upstairs to clean up and get ready to go over to my grandmother’s house. While I was getting dressed I hear my mother screaming from downstairs. We all ran down to see what had happened. Sitting there on the table was a half eaten cake and our dog Shannon cowering in the corner as my mother screamed at her. Somehow Shannon had gotten up onto the kitchen table and had thoroughly enjoyed that cake. In time the incident became a big family joke…… but my mother didn’t think it was very funny that night.
