Ingredients

2 cups Flour
1 and 3/4 cups Sugar
1 tsp Salt
2 tsp Baking Powder
1 tsp Baking Soda
2 tsp Cinnamon
1 tsp Allspice
1 tsp Ginger
4 Eggs
16 oz Pumpkin canned filling
1 cup Canola Oil
1/2 cup Walnuts optional, or use dates

Preheat oven 350 degrees.

Mix dry ingredients. Add eggs, pumpkin, and oil. Mix thoroughly. Blend in nuts (optional).

Grease and flour two 9" cake pans or one 9" x 2" x13" pan.

Bake for 30 min at 350 degree (layers) (or 45 minutes for a rectangular pan). I usually use a Bundt pan and bake for 55-60 minutes or until toothpick comes out clean. A Bundt serves 20+ and I like it because it is shaped like a pumpkin.

When cool, frost with cream cheese icing (http://depadova.net/index.php/recipe/cream-cheese-frosting/) or ... cover with whipped cream or Cool Whip.
