Preheat oven 350 degrees. |

Mix dry ingredients. Add eggs, pumpkin, and oil. Mix thoroughly. Blend in nuts (optional). |

Grease and flour two 9" cake pans or one 9" x 2" x13" pan. |

Bake for 30 min at 350 degree (layers) (or 45 minutes for a rectangular pan). I usually use a Bundt pan and bake for 55-60 minutes or until toothpick comes out clean. A Bundt serves 20+ and I like it because it is shaped like a pumpkin. |
