1 cup Salad Oilor Olive Oil

16 oz Pumpkin

1/2 cup Walnutschopped, use pecans as a substitute

Preheat oven 350 degrees. Grease two 9x5 inch loaf pans; set aside. |

Combine flour and next 5 ingredients; set aside. |

In large mixing bowl beat sugar and oil. Add eggs, water and pumpkin; beat well. |

Gradually add dry ingredients and stir just until blended. Stir in nuts. Pour batter into greased loaf pans. |

Bake for 55 to 60 minutes, until toothpick inserted in center comes out clean. Remove from oven to wire rack. |

Cool 10 minutes before removing from pans. Then let cool completely on wire rack. Makes 2 loaves. |
