1 and 1/2 cups Sugar

3 Egg Whites

2 cups Pine Nuts

Crumble the almond paste in a mixing bowl. Beat with electric mixer until fine. |

Sprinkle the sugar over almond paste while continuing to beat until sugar is incorporated. |

Beat in the whites, one at a time and continue beating until dough is smooth. Wrap in plastic wrap and refrigerate for 1 day. |

Preheat oven to 350 degrees and line two baking sheets with parchment paper or grease pans lightly. |

Spread the pine nuts out in a plate. Roll 1 tsp. of dough in a ball between your palms. Dip the dough ball onto the plate of pine nuts. Roll them in the nuts and coat lightly on all sides. Transfer them to pans and press them lightly to flatten. |

Bake cookies until lightly browned and soft about 17 minutes. Remove and cool completely on wire rack. |
