Ingredients

1 lb Ground Beef lean
3 Eggs
1/4 cup Bread Crumbs fine
1/8 cup Romano Cheese
pinch Parsley or 1 sprig finely chopped if fresh
1 clove Garlic minced
1 tsp Salt
to taste Black Pepper
for frying Olive Oil

Place the ground beef, bread crumbs, cheese, parsley, garlic, eggs, salt and pepper in a large mixing bowl. Mix thoroughly with your hands. Cover and let stand in refrigerator for 20 to 60 minutes. (pictures shown are of a double batch)

Shape into 1 1/2 inch balls and then flatten slightly. Moisten hands periodically with water to prevent meat mixture from sticking to hands. Fry in olive oil, turning to brown on all sides.

Yield: 10 to 15 meat balls. Meat balls may be frozen individually and placed in a plastic container or bag in freezer for 6 months or more. May be heated in oven or microwave and eaten as is or may be added to meat sauce for pasta with meat balls.
