1 cup Sugar

2 cups Heavy Cream

3 tbsp Rum

Melt chocolate in a double boiler. |

Separate eggs. Beat the eggs yolks until thick and lemon colored. Add sugar gradually while beating. Stir in melted chocolate. |

Beat the egg whites until a stiff peak forms. Whip the cream. Fold both into chocolate mixture and blend well. Add the rum if you wish. |

Spoon into a two quart bowl or parfait glasses. Chill at least four hours. Garnish with whipped cream and serve. |
