Ingredients

1 Fryer Chicken approximately 3 lbs
2 tbsp Canola Oil for frying
2 cloves Garlic large, chopped
10 Mint Leaves washed and patted dry
1 tbsp Capers rinsed in cold water
1 cup Green Olives split
1/2 cup Red Wine Vinegar

Cut chicken into serving size pieces, wash and pat dry with a paper towel.

Heat a heavy skillet, add the oil and fry the chicken until golden brown on all sides. Transfer the chicken to a pan.

Add the garlic, to the skillet, and sauté until golden.

Turn off heat and add the mint leaves, capers and olives. Stir so that all the ingredients are coated and then transfer to the pan containing the chicken.

Add the vinegar, cover the pan and bring to a boil. Lower the heat and simmer for 10 minutes, turning the chicken several times.
