1 lb Chicken Breast boneless, skinless, pounded thin
1 tsp Salt
1/4 lb Mushrooms sliced thin
to taste Black Pepper
2 tbsp Parsley chopped
1/4 cup Marsala Wine
Olive Oil

Cut chicken into pieces.

Heat oil in a large skillet and sauté a little at a time until browned on both sides. Set chicken aside - keep warm.

Reduce heat, add mushrooms; sauté until browned.

Return chicken to the skillet - pour in the marsala wine, and add seasonings. Cover and simmer for 2 minutes. Serve over rice.
