Ingredients

1 and 1/2 lbs Chicken Breast boneless, skinless, cut into pieces
4 cloves Garlic minced
1/2 cup Onions chopped
4 tsp Olive Oil
1/2 lb Mushrooms sliced
1 Red Pepper cut in strips
1 Green Bell Peppers cut in strips
1/2 tsp Red Pepper Flakes
28 oz Crushed Tomatoes plus half can of water
to taste Salt
to taste Black Pepper
to taste Basil

Coat the chicken pieces in flour.

In a large skillet add half the olive oil and sauté the chicken until white on both sides. Remove the chicken from the pan.

Return the pan to the stove – add the remaining olive oil and sauté mushrooms garlic, onions, red pepper flakes, and peppers. Season with salt, pepper, and basil. Cook for 5-8 minutes.

Add the crushed tomatoes to the saucepan with 1/2 can of water. Cook for 1/2 hour. Add the chicken and cook for 15 minutes. Serve over Fusilli pasta.
