Most people probably have never heard of Costco’s Seasoned Rack of Pork (pictured after cooking above). It is something they prepare and sell in some of their stores, but not all of them. The Costco near where we live prepares these racks of pork for Thanksgiving and for Easter. This is the only time they are available and you need to jump on them quickly (usually two weeks or so before the holiday) because they sell out fast.

They sell them in an aluminum container with plastic wrap. All you need to do is take the plastic wrap off, insert your temperature probes (highly recommended) and cook them in the oven.

The outside of the rack is well seasoned, and they also cut a deep slit along the entire roast. They stuff that cut full of additional seasonings. When you cut the chops you can clearly see the seasoning.

Trust me when I tell you that these chops are tender, juicy, and incredibly delicious! The problem is that you can only get them if/when they have them. So I set out searching the Internet to see if I could find someone who had duplicated the Costco seasoning. While I didn’t find a recipe that duplicates what Costco does, I did find a recipe that we really liked for seasoning the outside of a rack of pork.

Costco does sell unseasoned racks of pork packed by Swift under the Kirkland Signature brand.

You can buy these racks and season them yourself using this recipe. While the flavors are different, these racks come out just as tender, juicy, and delicious!!!

The recipe assumes a 2.5 lb rack of pork. If you have a 4 lb to 5 lb rack of pork double everything.

Preheat oven to 450 degrees

Line a shallow pan with aluminum foil and put a roasting rack in the pan.

Mix together pepper, salt, garlic, rosemary and sage into a bowl.

Rub the rack of pork with olive oil

Generously rub the dry seasoning onto the meat, pressing to create a crust of herbs and spices.

Place the pork onto the rack bone side up. Insert your temperature probes if you have them (strongly recommended)

Roast at 450 degrees for 15 minutes.

Turn oven down to 350 degrees and continue to cook for 1¼ hours or until the internal temperature reaches 145 degrees. *** I usually place multiple probes into the deepest parts of the roast. When the lowest probe reaches 145 degrees I pull the roast out of the oven. ***

Remove roast from oven and let it sit for 10 – 15 minutes. Slice between the bones and serve.
