Ingredients

1 Fryer Chickenapproximately 3 lbs

2 tbsp Canola Oilfor frying

2 cloves Garliclarge, chopped

10 Mint Leaveswashed and patted dry

1 tbsp Capersrinsed in cold water

1 cup Green Olivessplit

1/2 cup Red Wine Vinegar

Cut chicken into serving size pieces, wash and pat dry with a paper towel. |

Heat a heavy skillet, add the oil and fry the chicken until golden brown on all sides. Transfer the chicken to a pan. |

Add the garlic, to the skillet, and sauté until golden. |

Turn off heat and add the mint leaves, capers and olives. Stir so that all the ingredients are coated and then transfer to the pan containing the chicken. |

Add the vinegar, cover the pan and bring to a boil. Lower the heat and simmer for 10 minutes, turning the chicken several times. |
