1 and 1/2 cups Graham Cracker Crumbsabout 21 crackers

1/3 cup Sugar

40 oz Cream Cheesesoftened

1 and 3/4 cups Sugar

3 tbsp Flour

1 lemon Lemon Zest

5 Eggs

2 Egg Yolks

1/2 tsp Vanilla Extract

Stir ingredients for the crust and press onto bottom of a buttered 9x9x1/2 spring form pan. |

Preheat oven 500 degrees. |

Beat together cream cheese, flour and zest until smooth with flat beater attachment. |

Add eggs and yokes one at a time, then vanilla beating on slow speed. |

Put spring form pan in a shallow baking pan. Pour filing into crust and place in middle of oven for 12 minutes or until puffy. |

Reduce temp. 200 degrees until cake is firm (center will be wobbly) about 1 hr. |

Run knife around top of cake to loosen and cool completely on rack. Chill covered loosely at least 6 hours. |

Release pan and transfer to platter and bring to room temperature before serving. Top with raspberries or strawberries, if desired. |
