Ingredients

3 and 1/2 cups Flour
2 tsp Baking Soda
1 tsp Cinnamon
1 tsp Salt
1/2 tsp Baking Powder double-acting
1/2 tsp Allspice ground
2 and 2/3 cups Sugar
1 cup Salad Oil or Olive Oil
4 Eggs
1/3 cup Water
16 oz Pumpkin
1/2 cup Walnuts chopped, use pecans as a substitute

Preheat oven 350 degrees. Grease two 9x5 inch loaf pans; set aside.

Combine flour and next 5 ingredients; set aside.

In large mixing bowl beat sugar and oil. Add eggs, water and pumpkin; beat well.

Gradually add dry ingredients and stir just until blended. Stir in nuts. Pour batter into greased loaf pans.

Bake for 55 to 60 minutes, until toothpick inserted in center comes out clean. Remove from oven to wire rack.

Cool 10 minutes before removing from pans. Then let cool completely on wire rack. Makes 2 loaves.
