1 tsp Salt

3/4 cup Raisinsplaced in boiling water for a few minutes and then drained before using

1/4 lb Margarine

1/8 tsp Cinnamonoptional

1.5 cups Buttermilk

2 Eggs

In a bowl, sift dry ingredients together. Blend in margarine until mixture is fine like bread crumbs. Stir in raisins. |

In a separate bowl beat two eggs and add buttermilk to them. Pour into the dry ingredients. Mix with wooden spoon to make soft dough. |

Knead lightly on a floured board until it becomes smooth. Form into round, flat cake. |

Place in well-greased 8 inch or 9 inch cake pan. (It is an Irish tradition to cut a cross on the top of the bread with a sharp, floured knife) Bake at 350 degree for one hour, then lower the temperature to 325 degrees and continue to bake an additional half hour. |

Remove to rack and cool thoroughly before slicing. Serve with butter. |
