2 lbs Yukon Gold Potatoes Cleaned with skins on or peeled, quartered
2 tbsp Olive Oil extra-virgin
2 tbsp Parsley chopped
to taste Salt
to taste Black Pepper

Preheat oven to 400 degrees.

Quarter the potatoes and put them into a bowl. Add the olive oil and mix.

Spread out the potatoes onto a baking sheet/pan. Season with salt and pepper. Sprinkle parsley on top.

Roast in the oven at 400 degrees until golden and crispy on the outside, tender and cooked through on the inside, about 45 minutes.
